Maple Orange Carrot Dip

We are blessed with lots of bright, and gorgeous carrots at Farmers’ Market nowadays, and this dip is one of my favorite ways to enjoy carrots. The zest and juice of the orange brighten the flavors of the carrots, while the maple syrup adds a touch of sweetness that brings everything together.

For your next dip party, make this dip and taste the fall even more.

INGREDIENTS

  • 2 lbs carrots, peeled and chopped into even pieces

  • 2 tsp ground cumin

  • 1 tsp kosher salt

  • 1 orange, zested and juiced

  • 3 tbsp maple syrup

  • ¼ cup tahini

  • 2 garlic cloves

INSTRUCTIONS

  1. Preheat the oven at 350F.

  2. Roast chopped carrots and toss them with salt, cumin, and EVOO. Roast them in the oven for 20 minutes until they get fork-tender. We are not looking for any colors here.

  3. Add roasted carrots into a food processor with zested and juiced orange, maple syrup, tahini, and garlic cloves. Pulse everything together.

  4. Adjust the thickness by adding ice water. Season with salt. Serve the dip with fresh vegetables, bread, or crackers.
