Lemony Za’atar Potatoes

INGREDIENTS

  • 3lb potatoes, washed 

  • 1 cup lemon juice

  • ½ cup olive oil

  • 3 garlic cloves 

  • 2 lemons zested 

  • 3 tbsp zaatar 

  • 1 tbsp sumac

  • 1 tbsp oregano

  • 2 tbsp salt 

  • Parsley, or scallion

INSTRUCTIONS

1. In a large pot, bring salted water, and potatoes up to a boil

2. Cook for 15-18 minutes until fork tender. 

4. Preheat oven to 450F 

3. In a small bowl mix lemon juice, olive oil, zested garlic, lemon zest, zaatar, sumac, oregano, and salt. 

4. Drain potatoes, slice into wedge. 

5. Toss potatoes into lemon sauces, and place on parchment lined sheet tray

6. Bake or airfry for 20 minutes until crispy and delicious! 

7. Garnish with parsley or scallion serve with greek yogurt
